Stock or modified

I have a 77 standard beetle that my husband and I are restoring. The exterior will be as it came stock other than adding beauty rings to the stock sport wheels. It has the basic white interior, but I would like to do the interior in white with sapphire blue tweed inserts on the door panels and seats. I will also be changing the steering wheel and possibly the window cranks and door hanldes. It is fuel injected but my husand wants to change it to a carbuerator. Would this still be considered stock or would I have to enter the modifed class with these changes? :? I would also like to add a bud vase, a bamboo tray and roof rack someday, as this will also be my daily driver. :D

Guys that is a very good idea... actually, I'm planning to upgrade the car that I was bought last month... 1963 VW Beetle Convertible...
